Baking is a method of cooking food that uses prolonged dry heat, normally in an oven, but also in hot ashes, or on hot stones.
The most common baked item is bread but many other types of foods are baked as heat is gradually transferred from the surface of cakes, cookies, and breads to their centre.
Cake is a form of sweet dessert that is typically baked. In their oldest forms, cakes were modifications of breads, but cakes now cover a wide range of preparations that can be simple or elaborate, and that share features with other desserts such as pastries, meringues, custards, and pies.
Cake making is gradually taking over other items that undergo the baking process; and the owner of Nectar Cakes and Ice Cream did not only attest to it but said, cake business is booming at the moment.
Speaking as a guest on the programme “Today on STV” she stated that, the industry is a big one and there are lots of things involved in cake making.
She stated further that, cake making is a science and a cake maker should be a graphic artist, and do designs of cakes on the computer first before baking.
She revealed that, once instructions are not followed, the situation for such individual will be garbage in garbage out, stressing that, lack of knowledge about the business is the reason most cake makers have problems.
Concerning precautions and the reasons for some problems some bakers encounter, she stated that, for problems like sinking and cracked cakes, the solution has to do with the level of temperature.
As for the heat she sated further that temperature varies for ovens; as they need to be studied first, especially when it is new and the leveling agents used for baking is very important.
She urged bakers to be careful, because it is dangerous to buy leveling agent like expired baking powder and other materials used, stating that the remedy for the different colours, and cracked cakes, is to lower the temperature.
In a case where by the cake sticks to the container, she said knife needs to be used to remove it, urging that newspaper should be avoided b and A4 paper should be used.
In the area of challenges, she revealed that the major challenges faced while baking are: materials gotten locally are not good, poor standard of recipe, low quality of recipe.
Stating a major reason for this, she said, some ingredients have been compromised but the solution is lies in the hands of Standards Organization of Nigeria to standardize some things.
